Leave to cool, then flake into pieces. 2 Boil the potatoes in salted water for about 15 minutes until soft. Drain well, and mash with the butter until smooth. 3 Place the mashed potato, mustard, scallions, lemon zest and juice, and parsley in a large bowl, add the smoked haddock and mix well. Season to taste. 4 Divide the mixture into 12 equal portions and shape each portion into rounds. Place the flour in a small dish, the egg in another dish, and the breadcrumbs in a third.
